Sodium erythorbate is the sodium salt of erythorbic acid. It is also called araboascorbic acid, monosodium salt.
The IUPAC name of Sodium erythorbate is Sodium (2R)-2-[(2R)-4,5-dihydroxy-3-oxofuran-2-yl]-2-hydroxyethanolate.
Sodium erythorbate is white, free flowing, odorless, crystalline powder or granules. In the dry state it is reasonably stable in air,
but in solution it deteriorates in the presence of air, trace metals, heat, and light.
Sodium erythorbate (C6H7NaO6) is a food additive used predominantly in meats, poultry, and soft drinks. Chemically, it is the sodium salt of erythorbic acid. When used in processed meat such as hot dogs and beef sticks, it increases the rate at which nitrite reduces to nitric oxide, thus facilitating a faster cure and retaining the pink coloring. As an antioxidant structurally related to vitamin C, it helps improve flavor stability and prevents the formation of carcinogenic nitrosamines. When used as a food additive, its E number is E316. The use of erythorbic acid and sodium erythorbate as a food preservative has increased greatly since the U.S. Food and Drug .
1. In meat products: as a coloring aid, it can keep the color, prevent the formation of nitrosamines (such as nitrite), improve the flavor, and the incision is not easy to fade. Pickled vegetables: keep color and improve flavor.
2. Frozen fish and shrimp: keep the color and prevent the fish surface from oxidizing to produce rancid smell.
3. Beer and wine: added after fermentation to prevent odor and turbidity, keep color and flavor, and prevent secondary fermentation.
4. Fruit juices and sauces: added in bottling to keep natural VC, prevent fading and keep original flavor.
5. Fruit storage: spray or use with citric acid to keep the color and flavor and prolong the storage period.
6. Canned products: before canning, add them to the soup to keep the color and flavor.
7. Used in bread, it can keep the color and natural flavor of bread and prolong the shelf life without any toxic or side effects.
