Trehalose, also known as melezitose or fungus sugar, is a safe and reliable carbohydrate. Trehalose is a non-reducing sugar composed of two glucose molecules linked by a 1,1-glycosidic bond. It has three isomers: trehalose (α,α), maltotriose (β,β), and new trehalose (α,β), and it has non-specific protective effects on various bioactive substances. Trehalose is widely present in many edible plants and animals as well as microorganisms in nature, such as mushrooms, seaweeds, legumes, shrimp, bread, beer, and yeast-fermented foods that people consume in daily life.
1. In the food industry, it can be used as a sweetener with properties such as non-reducing nature, moisture retention, anti-freezing ability, and resistance to drying.
2. Trehalose has good affinity and stability with membrane proteins; it can be used as a skin permeation agent in topical products to enhance the absorption of nutrients by the skin. When combined with phospholipids to prepare liposomes, the effect is even better. It has excellent moisturizing properties and is effective in treating issues caused by dry skin such as increased flaking, dry heat of the skin, and keratinization. The usage amount in creams, washes, and ointments is between 5% to 10%.
